Here’s the recipe for the most delicious enchiladas that are quick and easy to make.
Ingredients for 10 chicken enchiladas:
- 500 grams of chicken breast
- 1 pack of corn tortillas
- 0.5 liter of sour cream
- 150 grams of feta cheese
- 1 onion
- Ki´gourmet salsa (we recommend La Doña or La Llorona)
Here’s how you do it:
Boil the chicken in half a liter of water with a quartered onion in one piece, some salt, a clove of garlic for 20 – 25 minutes. Then remove them from the pan and save the stock. Then start threading the chicken so you end up with long thin pieces. Put a deep pan with a teaspoon of oil over the stove and add 3 – 4 tablespoons of your favorite Ki´gourmet chili salsa. Slowly add a cup of the stock, stir and then add 2 tablespoons of full sour cream or more if you think it’s too strong. While the mixture is still lukewarm, dip one tortilla at a time so it gets soaked in the sauce, place it on a platter and place a thick strip of chicken and roll the tortilla up tightly. Place them in a dish and sprinkle with feta cheese and finely chopped onions.
