Mole is a Mexican chili sauce that comes in many different flavors depending on which chili is used. It is known for being made with chocolate and chili – without being a dessert sauce.
Historically, the dish originated in pre-Hispanic times and was originally called mulli. There are two states in Mexico that claim the place of origin of the mole, Puebla and Oaxaca. Regardless of its origins, the mole has been heavily influenced by local preferences and family traditions over the years, such as this mole from Mexican Heart, which is my mother’s recipe and the one I grew up with in Mexico. So of course it had to be included in our product range as it is delicious and easy to prepare.
Mole is an archaic word for mix and is thus a term for a sauce made with ingredients you had on hand. In this sense, mole has also become a symbol of the union between Mexican and European culture because it brings together ingredients from both. Therefore, today, the dish is a culinary symbol of Mexico’s mestizaje, which is precisely this fusion of cultures.
Easy Mexican Mole
Mexican Heart has created a product for an easy and quick mole – our homemade mole from Mexico, 400 gr. It’s a lightly spiced mole with sweet notes and is made with the best quality ingredients. Remember you can add more chocolate if you like or want it less spicy.
With our Mole, you get a deliciously easy mole in 15 minutes. That’s quite a time saver, as a mole made from scratch can easily take between 2-3 hours to make.
To prepare 10 – 12 portions of mole, you only need to dilute 400 grams of SPECIAL MOL in 1 liter of chicken or vegetable stock. Let it cook over low heat for 5 minutes, stirring constantly until you have the desired consistency. Eat it with chicken, over enchiladas, with shrimp, with pork or over Mexican rice for a vegan version,

Ingredients for homemade mole sauce:
Chilies:

3 dried ancho chilies
-
3 dried pasilla chilies
-
2 dried mulato chilies (can be replaced with more ancho)
-
2 dried guajillo chilies (optional for extra heat)
- 1-2 tablespoons chipotle in adobo sauce (optional for extra smoky depth)
Nuts and seeds:

50 g almonds
-
50 g peanuts (unsalted)
-
2 tbsp sesame seeds
Spices & flavors:
-
1 tsp cinnamon
-
1 tsp whole cloves
-
1 tsp coriander seeds
-
1 tsp black pepper
-
1 tsp cumin
-
2 cloves of garlic
-
1 onion, chopped
-
1 small ripe banana or plantain
-
2 slices of white bread (toasted)
-
1 small tomato
-
1 tsp sugar
-
75 g dark chocolate (70% or more)
Other:
-
750 ml chicken stock
-
2 tbsp oil (for frying)

Salt to taste
Procedure:
1. prepare the chilies:
- Remove the stems and seeds from the dried chilies. Roast them lightly in a dry pan for 1-2 minutes until fragrant – be careful not to burn them. Then soak them in warm water for about 30 minutes.
2. Roast nuts and spices:
- In the same pan, toast the sesame seeds, almonds and peanuts until golden. Then toast the cinnamon, cloves, coriander seeds, pepper and cumin for a minute or two.
3. Sauté vegetables:
- Fry the onion, garlic and sliced banana in oil until golden. Add the tomato and let it simmer for a while. Add the bread at the end and let it soak up the flavor.
4. Blend the sauces:
- In a powerful blender or food processor, blend all the ingredients together – chilies, nuts, spices, vegetables and some broth – into a smooth sauce. This may take several passes depending on the size of the blender.
5. Bring to a simmer and add chocolate
- Pour the sauce into a saucepan, add the rest of the stock and simmer for about 1 hour. Stir frequently. Add the chocolate towards the end and let it melt into the sauce. Season to taste with salt and a little extra sugar if needed.
How to serve mole sauce
Mole is a great sauce that can be used in many different dishes such as enchiladas or over boiled or fried chicken with rice. Mole is especially good in dishes with chicken, shrimp and pork. Sprinkle with sesame seeds and a little fresh coriander on top.
If you want to use Mole in vegan dishes, it is particularly suitable over rice.
