Ingredients
- 1 cup Naturelo corn flour
- 1.25 cup of hot water
Here’s how you do it
Step 1: Pour the flour into a bowl and slowly add the hot water. You may not need to add all the water. The important thing is to add enough water so that the dough doesn’t stick when kneaded.
Step 2: let the dough rest for 2 hours in the fridge. Cover it with cling film to prevent the dough from drying out.
Step 3: Knead the dough again and divide it into 50 gram balls.
Step 4: the buns now need to be made into pancakes. You can do this with a rolling pin or a tortilla press. The tortilla press is by far the easiest and fastest. If you use a tortilla press, we recommend using a piece of baking paper between the tortilla press and the dough. This makes it easy to transfer the pancake to the pan afterwards.
Step 5: The pancakes should now be heated in the pan. The pan should be heated with full heat and then set to medium to low heat. Once this is done, place the tortillas in the pan one at a time. When the surface becomes dry and changes color, it is ready to be flipped. This usually takes 30 – 50 seconds per tortilla.
