The burrito originated in northern Mexico and is thought to have roots in the early 20th century. The name means “little donkey” in Spanish, and a popular theory is that traveling salesmen wrapped food in tortillas and transported them on donkeys. The Mexican pancakes were especially popular in the Mexican state of Chihuahua, where wheat tortillas were more common than corn. Over time, the burrito spread to the United States, especially through Tex-Mex cuisine, where it was filled with more ingredients and gained popularity worldwide.

Mexican pancakes, also known as burritos, are a classic dish of Mexican cuisine where soft tortillas are filled with flavorful ingredients like spicy beef, beans, melted cheese and fresh vegetables.
This dish is both easy to prepare and incredibly versatile, making it popular in many homes. Mexican pancakes can be served with a selection of delicious side dishes such as guacamole, salsa and sour cream to add extra flavor and texture. It’s a perfect dish for cozy dinners where everyone can assemble their own pancake and enjoy a bite of authentic Mexican food.
Mexican pancakes recipe
Ingredients:
Spicy beef for Mexican pancakes
- 350 g ground beef
- 1 tsp ground cumin
- 2 tsp smoked paprika
- 1 tsp chili flakes
- 1 tsp ground coriander
- 1 pinch of whole cloves, ground
- 2 tbsp concentrated tomato paste
- 0.50 dl water
- Olive oil for frying
- Season with salt and pepper to taste
Fillings for Mexican pancakes
- 8 large wheat tortillas (buy them here) or see our recipe.
- 1 onion, cut into half rings
- 1 ½ avocados cut into slices
- 1 red bell pepper, cut into cubes
- 1 can of black beans (approx. 240 g drained weight)
- 8 tomatoes cut into cubes
- Heart salad cut into strips
- 1 can of corn
- ½ cucumber cut in half slices
Accessories for Mexican pancakes
- Guacamole (avocado, lime, coriander, salt)
- Salsa (find the tomato salsa recipe here)
- Chili Hot Soup (see our selection here)
- Grated cheddar cheese
- Creme fraiche or sour cream
- 3 limes cut in half
- Fresh coriander for garnish
Procedure:
- Start by cutting the vegetables and placing them on a platter or in bowls.
- Find a pan and heat it up, add olive oil and toast the spices.
Add the meat and brown it, then add the tomato paste and water. Bring the liquid to a simmer and season to taste with salt and freshly ground pepper. - Warm the tortillas: Heat each tortilla briefly in a frying pan so they become soft and slightly crispy around the edges.
Serving Mexican pancakes
Fill the pancakes: Place a spoonful of beef filling in the center of each tortilla. Sprinkle with grated cheddar, add your desired vegetables and then fold up like burritos or roll like pancakes.
Then you can cut the Mexican pancake crosswise and arrange it on a plate. Serve with guacamole, salsa, sour cream, lime and some fresh coriander.
