Our Mexican Mezcal

We carry two mezcals on the webshop. Both are from Oaxaca in southwestern Mexico. Here they are produced by master distiller mezcalero Don Zósimo Méndez. Here, mezcal is produced by fermenting in oak barrels and then distilling in a copper pot still. This compliments the soft flavor of the agave.

How it is produced

The complex mezcal making process begins with agave plants grown in mineral-rich soil. When the agave is about 10 years old, the mezcalillero selects the mature agave and cuts off the parts of the plant that do not go into the oven. The agaves are then baked in an earth oven for about 5 days, where the bottom is covered with glowing lava pieces and wood. This brings out all the flavors of the agave and the characteristic smoky taste.

The cooked agaves are then crushed in a Tahona, which is a mill wheel pulled by a horse. The crushed agaves are then fermented using only natural yeast and microorganisms in wooden vats and finally distilled in a copper pot still.

This unique manufacturing process has been passed down through generations of mezcalilleros.

Aged for 8 years, this mezcal has a slightly smoky flavor with a natural and smooth taste of agave, herbs and moisture notes.

Mezcal Fervor

Mezcal Fervor has an aroma of fruit and leather. This mezcal has several earthy notes that are complimented by notes of green agave, menthol, anise and pepper.
