Ancho chili is the dried variant of the poblano chili and one of the most popular chili peppers in Mexican cuisine and the southwestern United States. Ancho chili’s popularity can be seen in the fact that it has its very own name in dried form. Instead of calling them dried poblanos, they have been given the more exotic name ancho chili.
This chili variety originates from the Mexican state of Puebla. They are made when poblano peppers are allowed to stay on the stem to ripen until they turn red, after which they are harvested and dried. The process effectively preserves the peppers and greatly increases their shelf life. Mexican chefs and cooks around the world keep ancho chilies in their cupboards where they can be easily retrieved to add flavor to a wide variety of recipes, from soups and stews to salsas and sauces.
