Oaxaca in southwestern Mexico is famous for its legendary drink mezcal, which had both ceremonial and spiritual purposes.
The complex mezcal making process begins with agave plants grown in mineral-rich soil. When the agave is about 10 years old, the mezcalillero selects the mature agave and cuts off the parts of the plant that are not to be baked. The agaves are then baked in an earth oven for about 5 days, where the bottom is covered with glowing lava pieces and wood. This brings out all the flavors of the agave and the characteristic smoky taste. The cooked agaves are then crushed in a Tahona, which is a mill wheel pulled by a horse. The crushed agaves are then fermented using only natural yeast and microorganisms in wooden vats and finally distilled in a copper pot. The unique production process has been passed down through generations of mezcalilleros.
The most distinctive feature of Mezcal Profano is its great complexity and 100% artisanal production. The result is an honest handcrafted mezcal, made from 100% agave espadin, with good sweetness and many flavor nuances.
