Pasilla chili, whose name refers to the taste of the raisin, is the dried chilaca chili. It is one of the most eaten chilies in Mexico. Its flavor is soft, fruity and is widely used in the preparation of various stews (beef, pork, chicken), but also in several Mexican sauces, such as “Salsa Borracha (Drunken Salsa) which, besides pasilla chili, also contains Pulque, which is a fermented drink made from the juice of maguey plant. Pasilla chilli is also used in various mole (chocolate sauce) recipes and marinades.
