Where does Puya chili come from?
Puya chili originates from Mexico and is widely cultivated in Mexico’s Central Valley as well as Mexico City. Puya sometimes goes by the name “pulla” pepper.
What does Puya chili look like?
Puya chili’s pods are long, flat, tapered and slightly curved. They usually grow to 7 to 10 cm long. The chili has a deep crimson color, and can become even darker in tone. They resemble guajillo peppers and are often confused with them, although Puya are generally smaller than guajillos.
How strong is Puya chili?
Puya is considered a fairly hot chili pepper, similar in heat to a fresh jalapeño. The potency of Puya chili ranges from 5,000 to 8,000 Scoville Heat Units on the Scoville scale. Compared to a typical jalapeño, which ranges from 2,500 to 8,000 SHU, these are not far apart in strength.
Some consider the heat to be quite intense, but those who are used to higher heat chilies will probably consider the Puya chili to be a milder chili pepper.
Cooking with Puya
Puya chili peppers are a favorite in Mexican cuisine for making salsas, but also for making sauces, flavoring beef and pork, various seafood dishes, vegetables and for use as ground chili flakes. Puya is used to spice up soups and stews, breakfast and dinner, and everything in between.
As Puya is a dried chili pepper, they need to be rehydrated in hot water to soften them into puree. Most chefs also use the flavorful soaking water in their dishes.
