A tequila blanco is the original variant of tequila, and is a clear spirit that is unaged and less than sixty days old. The flavor of a tequila blanco can vary depending on the distillery and whether it is a 100% distillation from the agave plant. To make a tequila blanco more smooth and round in flavor, some distilleries choose to let the tequila rest in oak barrels for a maximum of thirty days. The raw material in tequila blanco is what can be extracted for other tequila varieties like reposado and anejo. A reposado tequila is aged from two months up to a year, giving the tequila a slightly more golden color. A tequila anejo is aged from one year all the way up to three years, which again, helps give the spirit a deeper golden color.
Tequila production in Mexico is currently limited to five Mexican states: Jalisco, Nayarit, Guanajuato, Michoacan and Tamaulipas. In these five states, the blue agave plant (Agave Tequilana Weber Azul) is grown, which is the very essence and basis of tequila production. The Blue Agave takes six to ten years to mature, after which the thick leaves are cut off.
Although liquor factories in Mexico have stagnated over the years for various reasons, there are still over 100 genuine liquor factories in Mexico producing over 900 brands of tequila and more than 2000 registered tequila brand names. In order to print the name “Tequila” on a bottle, the spirit must be produced in one of the five Mexican states licensed to produce and distill tequila. The producer must also comply with the official Standard for Tequila, also known as NOM-006-SCFI-2005, which specifies the distillery where the Tequila was produced. The NOM standard is under constant revision to meet the rapidly changing conditions that regulate international trade.
