Originally, tortillas were used as a convenient way to eat without cutlery and fillings varied according to what was available, from melted cheese to vegetables and meat.

Today, quesadillas are one of Mexico’s most popular everyday dishes and come in many variations – from simple cheese-filled versions to those with chicken, beef, mushrooms or chorizo. Served with salsa, guacamole or sour cream, quesadillas have become a global favorite that can be adapted to any taste.

Quesadillas with beef or chicken

With our recipe you can make Mexican quesadillas at home and enjoy the taste of a classic and beloved Mexican dish rooted in the country’s proud tortilla and cheese traditions.

Vegetarian quesadillas:

Quesadillas can easily be made into a delicious vegetarian version that is still packed with flavor and texture. By using fresh vegetables, melted cheese and spices instead of beef or chicken you get a rich and satisfying dish that both vegetarians and meat eaters will love.

Ingredients:

  • 8 corn tortillas
  • 300 g grated cheese
  • 200 g cooked chicken or beef or 1 green squash and 200 g mushrooms, cut into thin slices
  • 1 green chili, finely chopped
  • 1 red bell pepper, cut into thin strips
  • 1 small red onion, cut into thin slices
  • Fresh coriander (for garnish)
  • 2 tbsp butter or oil for frying
  • Salsa, guacamole and sour cream to serve

Procedure:

1. prepare the filling:

  • If you use meat or vegetables, make sure they are prepared and cut into small pieces so they can be easily distributed in the the quesadillas.

2. Fill and fold the tortillas:

  • Lay a tortilla flat on a clean surface and spread a layer of cheese over half.
  • Add your fillings of choice: chicken, beef, vegetables or just cheese for a classic quesadilla. Add some chopped chili and red pepper for extra flavor.
  • Fold the tortilla in half to form a half moon.

3. Fry quesadillas:

  • Heat a large pan over medium heat and melt a little butter or oil.
  • Place one or two folded tortillas in the pan and fry for 2-3 minutes on each side until golden and crispy and the cheese has melted. Repeat with the remaining tortillas.

4. Server:

  • Seat them warm with a delicious salsa, guacamole and sour cream as dips.
